First let me say that if you can afford it I would I recommend buying a Mac (an Apple computer.) However, there are a few exceptions, though, that necessitate purchasing a PC (a Microsoft Windows based computer).
-preferable brand (I'd love to say that I can afford a mac, but I can't, as my goal is to get a laptop for each of us.)

What brand should I buy?

I am not going to recommend a particular brand. The reason for this is because every major brand has made some really good models and they have made some real lemons.

What store should I buy from?

Local and Online:

What software do I need?

Providing that you have high speed Internet I would strongly recommend using Google Docs as your office suite. I personally have not used a locally installed office suite (Microsoft Office) in probably over a year. And prior to this I used OpenOffice rather than Microsoft Office. I create all of my "Word" documents, spreadsheets, and even presentations in Google Docs. If you must have a locally installed office suite try OpenOffice (http://www.openoffice.org/). OpenOffice is compatible with Microsoft Office but it is FREE!  I almost never pay anything for software. There is a lot of good free software out there and more and more good software is becoming web based (Web 2.0!). What are the minimum hardware requirements that I should be looking for?

-- I wouldn't buy anything with less than 3GB of RAM and no less than a 100GB hard drive.
